Healthy Mexican Summer Salad

Summer is in full swing and it’s getting a bit harder to keep within your healthy summer regime. Well maybe you need some tastier food.

A salad that helps me feel a bit more full is the Mexican Avocado Summer Salad. It’s fast, easy to make and very refreshing for summer.

What You Need:

Salad:
2 cups of black beans
1 cup of chopped tomatos
1 cup of chopped Hass Avocado
1 cup of corn
1 cup of chopped cilantro

Dressing:
1/2 cup of lime juice
3 Tblsp of honey
1 tsp of cumin
1/2 tsp of pepper
1/2 tsp of salt

What To Do:

1. Mix all the ingredients together for the salad then mix in all the ingredients for the dressing.

2. Pour the dressing into the salad. You can either serve it immediately or let it sit for a couple of hours for a stronger taste.

3. Enjoy!
