Mama’s Day Pasta

 Did you just happen to get that call informing you that the family gathering you have been invited to on Sunday, to celebrate Mother’s Day, is actually more of a Pot-Luck, where everyone is contributing by bringing along some homemade dish?!

Let me guess… this news threw you into a sudden tissy of a panic, as you pondered thoughts of what you could possibly bring, that could be as Easy As 1-2-3 to make, feed a lot of people and look good… Well @TheYLife we have just the dish for you!

Pasta is always a perfect platter to take to a family gathering, whether it be lunch or dinner, because it expands not just on the plate, but in tummies too! You see, with 2 boxes of pasta, in my case GF (Gluten Free) Rigatoni from Barilla (which is delish might I add) we will have more than enough to look like a perfect chef to Mom!

@TheYLife’s just the solution to this Mama’s Day conundrum!

Mama’s Day Pasta: 

In a large pot of Boiling Water, Add… 

1 Tbsp. Kosher Salt

2 Cups of Broccoli Florets

1 Cup of Sun-Dried Tomatoes

2 Tbsp. Extra Virgin Olive Oil

1 Box Barilla Gluten Free Rigatoni

Boil for 10 – 12 Minutes

In a separate saucepan, at Med- High Heat, sauté…

2 Tbsp. Extra Virgin Olive Oil

2 Tbsp. Fresh Garlic, Minced

A Dash of Salt & Pepper, To Taste

A Sprinkle of Italian Red Pepper Flakes & Oregano

Once Tender, Add… The Boiling Pasta, Broccoli & Tomatoes into your sauté pan… 

2 Tbsp. Fresh Basil, finely chopped

2 Tbsp. Fresh Parsley, finely chopped 
1 – 2 Cup Fresh Spinach 

1/4 Cup of Extra Virgin Olive Oil 

1/4 Cup of Pasta Water

Folding frequently to prevent Pasta from sticking, sauté until all your ingredients have harmonized in flavor! 

Plate, Drizzle with Extra Virgin Olive Oil & Mangia- Mangia!
