Dinner Time?! Chicken Parm


It’s almost that time again… DINNER!

But all you see in your fridge are the Chicken breasts you left thawing out this morning and frankly, Lord help you, you find yourself in the Chicken Rut!

The Chicken Rut is that emblematic moment in your life when you realize you have just about had chicken every which way you can and have no more ideas left in you, that will make it any more appetizing… So what do you do? Well you come to @TheYLife and we inspire you with some Gluten Free (GF) Chicken Parmesan!

GF Chicken Parm:

Wash, Dry and Trim 2 Chicken Breasts (Organic if possible)

Butterfly each Breast, making 4 pieces

Place each thinly sliced Chicken into a large ZipLock bag and using a mallet, begin the flattening processes…
(If you happen to have a lil’ excess Stress, this is better than going to the gym)

In 2 bowls place:
1 Egg, Whisked
3/4 Cup of Milk

Begin by running the breast through the Milk and follow with an Egg dunk

Once you feel the Chicken has been evenly coated with Egg

Place your Egg dunked Chicken on a plate piled with…
1 Cup Brown Rice Flower
1 Tbsp. Garlic Powder
1 Tbsp. Italian Seasoning

Quickly Brown…
Place the flowered Chicken Breast in a frying pan with 3 Tbsp. Extra Virgin Olive Oil

After gently browning the Chicken, place on a parchment lined baking sheet, top with…

3 Tbsp. Diced Organic Tomatoes from a can

4 Thin Slices of Fresh Mozzarella Cheese

1/4 Tsp. Italian Seasoning

1 Tsp. Freshly Grated Parmesan Cheese

A Drizzle of Extra Virgin Olive Oil

Bake at 350 Degrees for 20 Minutes, or until Golden Brown!
