Sunday Dose of Comfort: Mixed Up Mash

Due to the weather being less than optimal across the nation and our world… with what is being called the worst snow storm in decades leaving Jerusalem covered with over 20 Inches of frozen rain. In Cairo, Egypt a white blanket of snow has covered the pyramids for the first time in 120 years and right here in the United States, the North East has been converted into a Winter Wonderland just in time for the Holidays!

So we thought some Creamy Mashed Potatoes would be the perfect comfort food to help settle those ice cold tummies and here is our unique twist on this classic dose of Ameircana!


L’s Mixed Up Mash:

Set a Large pot of Boiling Water on the stove


2 Tbs. Salt

3 Large Malangas (Hispanic starch- root, like potatoes, peeled & sliced)

2 lb. of Golden Potatoes

Fork potatoes after 15 Minutes and begin to remove those softened

Place Potatoes & Malangas in a Mixing Bowl

Keep 1 Cup of Starchy Boiled Potato Water aside


In a Pan, Heat:

1/4 Cup Extra Virgin Olive Oil

3 Tbs. Garlic, Minced

3 Tbs. Herbes De Provence

1 Tbs. Rosemary, Dried

1 Tbs. Fresh Cracked Pepper

1 Tbs. Kosher Salt

In a Small Pot, Boil:

1 Cup of Soy Milk

Mash Potatoes- adding Soy Milk and Starch Water to smooth

Fold Olive Oil & Spices into Potatoes

Garnish with 2 Tbs. of Butter Substitute (Earth Balance)
