FALLing 4 French Toast

Frankly there is NOTHING better than Autumn, it’s the truth and we all know it!

Whether it’s the Fall’s Pumpkin Spice Lattes or the Sweet Potato and Pumpkin Ravioli that fulfill your cravings… The warm and spiced sensation you get, when you bite into anything and everything during Fall harvest, is like no other!

One of my favorite indulgences is Pumpkin French Toast, it’s not only as Easy As 1-2-3, but it’s delicious and so gourmet it will leave your guests thinking it was take-out!

The Y Key... Kings Hawaiian Rolls... You read right, those buttery little sweet rolls that sit propped up by the deli at your market are the best for French Toast! I don’t know Y, but they just make French Toast better! BUT, if you can’t get your hands on these bad boys, try for Challah Bread!

Mini Pumpkin French Toast:

In a mixing bowl combine…

3 Eggs

1/4 Cup Canned Pumpkin Purée  (Libby’s is always a favorite)

1 Tbsp. Pure Vanilla Extract

1/2 Tsp. Cinnamon Sugar

A Pinch of Salt

Slice Kings Hawaiian Rolls into 1/4 Inch Slices

In a stovetop Grill Pan at Medium-High heat, sizzle 1 Tsp. Earth Balance (Butter Substitue)

Soak Bread Slices for 2 Minutes on each side and place on Pan to Sear … For 2 1/2 Minutes on each side…

Plate your Pumpkin French Toast, Butter and Maple Syrup as you too with Sprinkled Fairy Dust of Powdered Confectioners Sugar!

If there is one thing I can promise you, your plates will be clean as can be… And if you truly want the full Fall effect, you can include a small side of Fresh Cranberry Sauce as the perfect accompaniment!
