Heirlooms & Mozzarella.. What’s Better?

Happy Wednesday! We know what you are thinking… it’s that midweek slump and you are just about drained, so trying to plot new and fun ways to mix up your dinner menu is imperative!

There is something so special about the produce you can gather at the market during the last weeks of Summer… Especially when it comes to Tomatoes!

Just this past weekend I encountered a selection of some delicious looking Baby Heirlooms… With those perfect hues of Orange, Yellow and Red, then paired with that pure aromatic effervescence of freshly plucked baby fruits right off the vine… I couldn’t help myself!

There is no better accompaniment to your piping hot Pasta Dinner than a fresh heirloom salad… Let’s face it, what could be better to take this salad to the next level, than adding in some Fresh Cheese?! 

It’s as Easy As 1-2-3, which means you can put it together right after work and pop it in the fridge, while you boil your pasta! Here is a YTip: One of our favorite easy ways to prepare pasta, is as simple as… Sautéed Extra Virgin Olive Oil, Garlic, Kosher Salt, Fresh Parsley and Basil! Fold & Eat!

Paired with a perfectly blended glass of Cabernet and you have a 5- Star meal in your belly within 30 Minutes! I must admit, when I tried this salad on my guinea pigs it got an A+ rating, so we know it’s a safe bet to bring as a dish to a dinner party or pot luck!

L’s Heirlooms & Mozzarella..

1 Pound of Baby Heirloom Tomatoes, Halved

1 Cup Miniature Mozzarella Balls (Plain, not marinated)

1/4 Tsp. Kosher Salt

1/4 Tsp. Fresh Ground Black Pepper

1/4 Tsp. Dried Oregano

1 Tbsp. Fresh Thyme 

1/4 Cup of Fresh Basil, Julienned

1/4 Cup Extra Virgin Olive Oil

2- 3 Tbsp. Red Wine Vinegar 

Fold Ingredients Together & Refrigerate for 30 – 45 Minutes
