Nectarine, Blueberry Bread Puddin’


Well it’s Thursday and there is nothing better on the horizon than the yummy weekend ahead… If you are craving a delicious sweet treat, which combines everything that is perfect about Summer, than we have just the thing ‘Nectarine, Blueberry Bread Pudding‘!

Nectarines are the fruit that look just like the furry Peach, but have sleeker skin… they are in season from June- September and LOW Calories, with just 44 Calories per serving to be exact. Nectarines are known for having a reputation of being perfectly sweet, delicious and juicy fruits rich in Anti-Oxidants, Vitamin B and Niacin!

‘Nectarine, Blueberry Bread Puddin’

Pre- Heat oven to 350 Degrees & In a 10 in. non-stick Bake Pan, place… 

1 Loaf Challah Bread, Diced into 1 in. Chunks 

1/4 Cup Fresh Blueberries 

2 Nectarines, Chopped (About 1/2 Cup)

In a Mixing Bowl, prepare your Custard Batter…

6 Eggs 

1 1/2 Cup of Milk (3/4 Evaporated Milk, 3/4 Reduced Fat (2%) Milk)

1 Tbsp. Cinnamon 

1 Tbsp. Pure Vanilla Extract

1 Tbsp. Orange Zest

3/4 Cup Organic Turbinado Sugar

Pour & firmly Press Custard Batter to soak the Challah & Bake for 30 Minutes, Until Golden Brown

Let’s Make Some Rum Sauce… Over Low Heat Simmer…

1 Can Low- Fat Sweetened Condensed Milk 

1/4 Tsp. Pure Vanilla Extract 

2 – 3 Tbsp. Dark Rum of your choosing

Serve Bread Pudding, Top with Rum Sauce & Garnish with a Mint Leaf
