Tornados, Lightning and Storms Oh MY!

Not sure about you, but with all of the crazed developing weather patterns across the country this week, there couldn’t be anything more appropriate to warm the soul, than a quick and easy vegetable soup. You see, the best part about preparing a good pot of soup, is the leftovers you will have for days on end! 

This soup in particular uses an organic tomato base, some frozen vegetables and tons of fresh herbs… binding their flavors together, with just a few hours on the fire.

Tasty Tuesday Veggie Soup…

Heat 3 Tbsp. Extra Virgin Olive Oil on Medium- High Heat

Sauté 1 Small White Onion, Diced

1 Cup of Carrots, Diced

3/4 Cup of Celery, Diced

1 Medium Sweet Potato, Diced

2 Tbsp. Fresh Garlic, Minced

Sauté Veggies Until Tender, By Adding 1 Tsp. Kosher Salt

Add, 1 Cup Frozen Vegetables

3/4 Cup Crushed Jarred Organic Tomatoes

2 Red Skin Potatoes, Diced 

1 Can Garbanzo Beans, Drained & Rinsed

Bring Veggies To A Boil with 6 Cups of Water 

Add Herbs… 

2 Tsbp. Fresh Rosemary, Minced

2 Tbsp. Fresh Thyme, Minced 

2 Tbsp. Fresh Parsley, Minced 

1 Tsp. Dried Herbes de Provence

1 Tsp. Fresh Ground Pepper

Sprinkle with A Dash of Red Pepper Flakes

Once the soup has begun to bond… Add a Tsp. of Kosher Salt… & 1 Tsp. of liquified Corn Starch 

To finish off  our Tasty Tuesday Veggie Soup… Add 1 Cup Fresh Kale

Reduce and Serve with a Drizzle of Extra Virgin Olive Oil!
