When most of us think of flavor, we believe it takes Trans Fatty, Sugar Loaded and Corn Starched Calories to make a dish delish… BUT it doesn’t! You see, this SOFRITO is a vegetable base that sauté’s with Extra Virgin Olive Oil or Vegetable Oil to enhance everything from Chicken Fricassee to Black Beans.

SOFRITO:

In a Medium/ High heated Pan… Sauté 1/4 Cup of Extra Virgin Olive Oil

Add:

1 White Onion, Finely Diced

1/2 Red Pepper, Finely Diced

4-5 Garlic Cloves (2-3 Tbsp.), Minced

1/4 Cup Manzanilla Olives with 2 Tbsp. of Olive Juice

1/2 Cup of Canned Diced Tomatoes

1 Tsp. Kosher Salt

1/2 Tsp. Freshly Crushed Ground Pepper

2 Bay Leaves

1 Tbsp. Complete Seasoning (Badia’ Sazon Completo)

1/4 Tsp. Ground Cumin

As these ^ Ingredients Sauté Add 1/4 Cup of Dry White Wine for 10 to 15 Minutes and add or save your SOFRITO base for future dishes!
