Some call it gravy, others call it Marinara… It can be found bottled or canned, but Undoubtedly THE BEST way to EAT it, is from scratch!
Originating in Naples, Italy this form of tomato sauce is served over or folded into Boiling Hot PASTA and has 4 Basic Ingredients… Tomatoes, Garlic, Basil and Olive Oil!
One of the first tales in regard to the creation of ‘The Sauce’ takes us back to cooks aboard Neapolitan ships in the mid-16th century… The sauce originated as an ideal recipe for long oceanic voyages, because it was resistant to spoilage! You see, due to the high acidity content of tomatoes, which had been introduced to Europe by the Spaniards, the sailors were able to preserve the quality of a sauce from spoiling!

At Medium/High Heat… Simmer 1/4 Cup of Extra Virgin Olive Oil
2 Cups Miniature Plum Tomatoes
5 Cloves of Garlic
1/4 Cup Fresh Basil, Julienne
1 Tsp. Of Kosher Salt
1 Tbsp. Dried Oregano
1/2 Tsp. Fresh Ground Pepper
Optional: 1/4 Cup Red Wine
