BUT, simultaneously you know in your heart of hearts you will feel extraordinarily guilty the second you indulge in that salty, crunchy, corn- chip we recently linked as a culprit in L’s ‘expansion’!
So we have a quick and easy Greek inspired Cucumber Salad that will not only fill your tummy, but also your heart.
L’s Easy As 1-2-3 Greek CuCumber’s:
1 English Cucumber (Peeled, Halved and Sliced- avg. 2 Cups)
1 Cup Vine Ripened Heirloom Tomatoes, Quartered & De-seeded
1/4 Cup Extra Virgin Olive Oil
2 Tbsp. Red Wine Vinegar
2 Tbsp. Fresh Mint, Minced
1 Tbsp. Dried Oregano
1/4 Tsp. Course Kosher Salt
Pepper 2 Taste
A Bed of Wild Arugula
It’s Easy as 1-2-3! And if you are in the mood to get adventurous add 1/4 Cup of Feta Cheese and some Olives to make it 100% Greek! L went the Vegan route, which is pretty great too!
