Mina’s Orange Bundt

20140523-204247-74567877.jpgJust last week as I was sitting at my Aunt Mina’s house… I was suddenly struck with the pungent, delectable aroma of orange-sickle. Yes, orange-sickle! That same tantalizing orange treat we so eagerly and poignantly remember from our 90s childhood, that was so perfectly swirled with vanilla and made every bad  school day soooooo much better!

I quickly did a double-take, looked at my aunt and asked about the orange smell, she said it was her ‘Orange Bundt’… after watching the dessert hour come and go and all the eager little monsters just prying for seconds- I knew this was a recipe I had to bring home for each and every one of you!

This Easy As 1-2-3 recipe fits in perfectly to your Memorial Day plans and it is a hit with young and old alike!

Mina’s Orange Bundt:


1 box Yellow Cake Mix
1 package Vanilla Instant Pudding Mix
1/2 cup Vegetable Oil
4 Eggs
1 cup Orange Juice


1 stick of Butter
1 cup Sugar
1/4 cup Orange Juice

Simply… Grease and flour a bundt pan. Sift all dry cake ingredients and then mix in Oil, Eggs and OJ. Mix well to remove any bumps in the batter (Hint: Electronic Mixer might work BEST). Follow by pouring batter into your greased Bundt pan and Bake at 350 degrees preheated oven, until done…BTW Mina’s secret is baking the bundt for exactly 38 Minutes! SHHHHH!!!!!!

BUT wait… While the cake is still warm, poke holes into the cake…

To make the glaze: simply bring all ingredients (Butter, Sugar and Orange Juice) to a boil…

Pour glaze into the cake, allowing it to soak

All the while letting it cool before turning over (About 1 Hour)!

All right, all right, all right! So it may not be the lowest caloric cake… but, boy is it perfect!
