Yes you read right, GF Oatmeal Raisin Cookies- ordinarily full of butter and heavy flours… L’s version is infinitely delicious, especially right out of the oven as the cookies gently break apart as if only they were bursting of Gluten at the seams, except they are just pure GF Vegan joy! These little rounded mounds of heavenly bliss are a guaranteed hit with any and all!
When you have so many allergies it becomes quite the challenge to indulge in treats that are safe to eat, unless they are homemade- and just the thought of ‘H-O-M-E-M-A-D-E’ sends many running for the hills; But, this is an #EasyAs1-2-3 recipe… so pre-heat the oven to 400 Degrees and let’s get started!
L’s Gluten- Free Oatmeal Raisin Cookies:
In a Medium sized Mixing Bowl Combine…
1 Cup GF Brown Rice Flour
1 Cup Dried GF Rolled Oats (Bob’s is my FAV!)
3/4 Cup Packed Brown Sugar
1 Tsp. Baking Powder
1/2 Tsp. Kosher Salt
1 Pinch of Cinnamon
3/4 Cup Raisins
Fold together dry ingredients & then mix in wet ingredients…
2 EXTRA Ripened Bananas
2 Tsp. Vanilla
3/4 Melted Vegetable Based Butter (Earth Balance)
Bake 15 – 20 Minutes at 400 Degrees (or until browned) & Enjoy Warm!
I won’t even lie… I think I eat the whole batch EVERY time!
