OMG LeftOvers! 

Once Thanksgiving festivities wrap and the evening lowly rolls to its end, you realize all of your hard work, time and effort has successfully filled each of the rumbling tummies as you peer towards the living room and see grandma napping and satisfied friends filing out the door to head for home. Then suddenly, you glance towards the counter and come to terms with the fact, that you have been left with a few notable remainders of the evening of excess: leftovers, tons of calories and the question… What to do with all of the ingredients that were left on the cutting room floor? Well, this situation occurred to me, with a large can of Pumpkin Pie filling and I was determined to find the solution.

Not wanting to discard a perfectly good amount of Canned Pumpkin, I set out to find all the varied alternatives that would make the best use of the elements I was spared and these were my results! Pumpkin Chili, Pumpkin French Toast or Pancakes and/ or I could use the puree’ to make Mini- Pumpkin Cheesecake Dessert Bites, that could be snacked on during the week to come. Since they appeared to be as easy as 1-2-3 I gave it a shot and success became of my endeavor!

Mini Pumpkin Cheesecake Dessert Bites:

Heat Oven to 375˚

Spray Vegetable Oil in each crevice of a Mini Muffin Tin 

In a Large Mixing Bowl:

An 8 oz. Cream Cheese, softened

1/4 Cup Brown Sugar

1/2 Cup Canned Pumpkin

1 Egg + the White of another

2 Tbsp. Maple Syrup

1/4 Tsp. Cinnamon

1/2 Tsp. Crystalized Ginger, Minced

Blend together with a Hand Mixer until whipped to cream like consistency

Crust:

Buy a Package of Ready-To-Bake Store Bought Sugar Cookie Dough (Ready 2 Bake) 

Cut Dough into 25 Slices & Roll each slice into a ball 

Gently press each ball into individual Tin crevice’s 

Fill With Cheesecake Filling

Bake 20 Minutes 

Garnish:

Slice Candied Oranges and Sprinkle Cinnamon Sugar

Nothing says Thanksgiving like another great OMG Leftover, which comes to @TheYLife from those delectable, mouthwatering mashed potatoes that were abundantly ‘tuperwared‘ into your fridge last night! Get in the spirit of the season by co-celebrating Hanukkah and delight your family with Potato Pancakes

Leftover Mashed Meets Match:

Heat Pan on Medium High Heat

Drizzle 2 Tbsp. Extra Virgin Olive Oil

Bowl 1/4 Cup Rice Flour

With a Tbsp… Scoop out Leftover Mash

Roll the cold Mash into balls

Flatten & Lightly pat Mash in Rice Flour

Slide into hot pan

Cook for 3 minutes on Each Side

Serve Warm with a Side of Apple Sauce & Sour Cream
