This Thanksgiving week as you prepare to be thankful for all of your blessings… You can look to @TheYLife for inspiration on any last minutes recipes that have been approved by our in- house guinea pigs. Some of these recipes are family traditions, which have been passed down and continue to be cherished during the Holidays every year. Others are our own creations, but all of them will keep one thing in mind HEALTH!
We have been driven by overwhelming numbers of health conscious Y’s to make sure that our dishes have one thing in common, they won’t be hurting your waistline! We will also be incorporating some delicious Dairy & Gluten Free Options, like this Turkey recipe passed down to me, by Aunt Lucy!
Thanksgiving EVE:
Turkey (18 lb.)
Clean the Turkey In & Out (remove Giblets)
Seasoning (Press together Garlic & Spices):
4 Sour Oranges (Alternate: 1 Cup Bottled Sour Orange Juice)
1 Whole Garlic
1 Tbsp: Dry Oregano, Black Pepper, and Paprika
Poke holes in Turkey and Stuff with: Garlic Spice Mixture & Pour Sour Orange Juice
Cover & Leave Over night in the refrigerator
Stuffing:
Cook 2 Cups of Brown Rice, as directed
On the Stove-top Brown:
2 Tbsp. Extra Virgin Olive Oil
2 lbs. Ground Turkey
1 Onion, Chopped
*Drain
Add:
1 Can Tomato Sauce (8 oz.)
½ Tsp. Dry Basil
½ Tsp. Dry Oregano
½ Tsp. Dry Thyme
½ Tsp. Salt
½ Tsp. Pepper
1 Cube Chicken Bullion
Cook Stuffing a’lla Stove- top for 5 Minutes & Begin to fold in Brown Rice
Cool Overnight in Refrigerator
Thanksgiving:
Pre- Heat Oven 350°
Remove Turkey and Stuffing from Refrigerator
Insert Plastic Pop- Up Thermometer
Stuff our Turkey
Tuck Turkey Wings Backwards and Tie Legs Cooking Twine
Cover with Aluminum Foil
Cook for 3 Hours (Estimating accurately according to the weight of your Turkey)
Uncover Turkey and Baste with Drippings (Turkey Juices)
Cook for an additional 2 – 3 Hours, Basting Every Hour
GRAVY:
Combine on Stove- top at Medium Heat:
2 Cups of Turkey Drippings
1 Tbsp. Worcestershire Sauce
½ Cup Water
2 Tbsp. Of Rice Flour (add more based on thickening)
Whisk and Heat through until Consistency Thickens
