Fresh Roasted Corn Salad

There is nothing quite like Fresh Roasted Corn during the Summer months, that makes me feel better about the sun on your face and sand at your feet.

Summer is meant as a time to re-nourish your body and revitalize your energy to truck along through the rest of the year! Now, don’t get me wrong I am a Fall Girl through and through, I love everything about Fall! From the Crimson cloaked leaves gently floating off of tree branches, to the aromas of fresh honey roasted nuts and simmering caramel on stovetops, Autumn is my season.

But I was born under the rise of a Summer moon and I too can appreciate a few delectable tidings of Summer, like fresh Berries and BBQ’s… and My Favorite Roasted Corn Salad!

Fresh Roasted Corn Salad

Pre- Heat Oven to 350 Degrees

Wrap 4 Corns (de-husked) individually in Aluminum Foil

Add: Dash of Kosher Salt and a Slice of Earth Balance Buttery Spread 

Bake for 30 – 45 Min. until Golden

Remove from Oven & Cool

Halve 1 Cup of Baby Heirloom Tomatoes

Chop 1 Cup of English Cucumber into 1 in. chunks

Chop 1 Cup of Haas Avocado into 1 in. chunks

1 Tbsp. Fresh Parsley, Minced

1 Tbsp. Fresh Chives, Minced

1 Tbsp. Fresh Tarragon, Minced

Salt & Pepper to Taste

Cut ALL kernels off of your Roasted Corn

Toss into a Salad Bowl with your ^ Fresh Ingredients

Sweet Honey Mustard to Dress… 

You can dress the salad however you wish, my favorite… 

1 – 2 Tbsp. Honey

1 Tsp. Dijon Mustard 

2 Tbsp. Lemon Juice

2 – 3 Tbsp. Extra Virgin Olive Oil 

Kosher Salt & Pepper to taste…
