Bok Choy is…

A green leafy vegetable, which is a member of the Chinese Cabbage family! These vegetables are a subspecies of the Turnip and belong to the same genus as such Western staples as cabbage, broccoli, and cauliflower.

Chinese cabbage was grown in the Yangtze River Delta region, but during the Ming Dynasty attention was brought to the fact that it had medicinal qualities… so around the 14th century, the cabbage was brought north and then it became exported back south along the Grand Canal and traded by sea.

Cabbage became a staple in Northeastern Chinese cuisine and especially in Korea, where kimchi became a traditional food group. Due to cultural exploration within the foods of the world, Chinese cabbage is now found in markets across the globe!
