This is the perfect solution to a quick summer’s Vegan night dinner!
Place a large pot of boiling water stove- top & add:
1 Tbsp. of Kosher salt
1 16oz. Package of GF Corn Spaghetti
Boil for 12 Minutes & Drain (pasta remains in colander)
Place pot back on stove- top & add:
½ Cup of Olive Oil
1 Pint of Cherry Tomatoes, halved
1 Red pepper, thinly sliced
3 Cups of Raw Spinach
1 Tbsp. of Salt
2 Tbsp. of Garlic, Minced
2 Tsp. Herbs de Provence
½ Cup Fresh Basil Julienned
Allow ingredients to cook over Medium Heat for 10 Minutes & Spinach will begin to reduce
Place pasta back in pot
Fold pasta with vegetables and Serve!
